Choco Peppermint Caramel Dreams

Ok, consider this a warning...these are a little messy to make....but a dream to savor.  Have the kids help. They’ll love licking excess off their fingers! Make extra and freeze so you have them on handl They won’t last long.  They really won’t last long! Lol.


Chocolate Ingredients
1c cacao paste, chopped
1/2c cacao butter, chopped
2T coconut sugar, powdered
1 tsp vanilla extract (or 3 drops Medicine Flower vanilla)
1/2 tsp peppermint extract (or 3 drops Medicine Flower mint)


Date Paste Ingredients
10 medjool dates, pitted and chopped
1/4c maple syrup
4 drops Medicine Flower butterscotch extract, or 1/2 tsp vanilla extract. 
Pinch Himalayan salt

Garnish  
1c sprouted/dehydrated buckwheat, coarsely chopped ( or use more almonds)
1/2c sprouted almonds, chopped   
2c dried coconut, fine shred 
3/4c sunflower seeds

Garnish #2
1/2 cacao pastechopped
1/4c cacao butter, chopped, optional 
1/4 tsp peppermint extract
Directions for Chocolate
In double boiler or over hot water, melt cacao paste and cacao butter butter.
Add extracts and stir in sugar.
Keep in bowl, over bowl of hot water and stir frequently. Set aside.

Date Paste
In food processor, pulse chop dates, maple syrup, extract, and salt.
Process until creamy. Stop and scrape sides several times until mixture is smooth.

Slowly drizzle melted chocolate mix into date paste while running machine on low.

Mix thoroughly. 
Transfer batter to large bowl. It  can be a little messy
 but be sure to scrape it all out. 

Add remaining ingredients in Garnish #, in small amounts, mixing with a large wooden spoon, and then by hand. It gets fairly firm, but pliable.

Press and spread mixture evenly into a large cookie sheet, covered with parchment paper. Work flat, until evenly distributed. 

Garnish #2
Melt cacao paste andcacao butter, mixed with 1/4 tsp peppermint extract and drizzle over bar. 
Freeze 3-4 hours or until firm. 
Cut into squares and serve.

Store in airtight container and store in freezer.
