Ohhhh, this is a keeper! It didn’t come out at all like I was expecting, but so much better. What started out as a creamy carrot soup, gone green, turned into a guacamole love bowl. Get out your corn chips!!! This is one hearty meal!!!!!

Creamy Carrot Guacamole Soup
Ingredients
2- 3 large carrots, chopped
1 1/4 cups water (add as needed)
1 large clove garlic - chopped
1/2” chunk ginger or 1/2t ginger powder
1/2 small red onion, chopped
1/2 cup fresh spinach
1/2 cup fresh parsley
1/4 - 1/2 cup fresh cilantro
1 avocado, divided and chopped
1/2 lime, juiced
1/2 teaspoon cumin powder
1/2 teaspoon turmeric powder, optional
1Tablespoon maple syrup, optional
1/2 teaspoon sea salt
Dash black pepper freshly ground, to taste
Dash cayenne powder, to taste
Garnish
Remaining 1/2 of avocado chopped
1 cup Cucumber, spiralized
Chives
Chopped tomatoes, optional
Chopped red onion, optional
Directions
In blender, mix carrots, water, garlic and ginger.
Add red onion, spinach, parsley, cilantro, half avocado, lime, cumin, salt, pepper, cayenne, and blend until creamy.
Add more water as needed for texture.
Serve and garnish with chopped avocado, chopped chives, cucumber noodles, and cracked black pepper.
