Rawfully Tempting's Sensational Red Cabbage Slaw

Quick, easy, refreshing....delicious! I recently harvested an amazing batch of sunflower seed shoots and wanted to feature them in a salad that was a snap to prepare. Obviously, if you don't have sunflower shoots, you may use other sprouts...but I highly suggest giving them a shot, they are my favorite sprouts of all!!!

ABOUT SUNFLOWER SEED SHOOTS

Red Cabbage Slaw Ingredients
1/2 head red  cabbage, shredded
1/4 cup apple cider vinegar
¼ tsp Himalayan salt
3 Tablespoons olive oil
1 cup carrots, coarsely chopped
2 cups cucumbers, coarsely chopped
1/4 cup green beans, chopped
1 cup sunflower seed shoots (or sprouts of your choice)
¼ cup red onion, thinly sliced
2 Tablespoons sundried olives, chopped
3 Tablespoons sunflower seeds
Dash black pepper

 Directions
Using knife, shred cabbage and add to large bowl.

Add raw apple cider vinegar, oil, and salt, and mix with hands until cabbage softens.

Add remaining ingredients and mix well.

Serve immediately, or store in refrigerator.

This was so delicious, I made it two nights in a row!
