Who doesn't love a good PNJ sandwich? Well this yummy treat will tease your tastebuds, and is quite reminiscent of our old favorite comfort food. Okay, so I know I tend to be a bit ingredient laden in my recipe creations, but every now and then, SIMPLICITY screams out and is willing to do the trick. (Feel free to omit the coconut oil too). If you don't like the little globules of unblended chia, simply add it to the blender! Easy Peasy!
The good news for you low-carb folks, is it is #keto friendly too. (Less than 5 net grams per serving)!!!
Enjoy with any fruit! This one, with strawberries just happens to fit the bill for me, but blueberries or blackberries would be outstanding too. Make a double batch while you are at it...it will go fast!

Peanut Butter and Jelly Tapioca Ingredients
(8 servings @ 1/2 cup each)
4 cups unsweetened almond milk (strained fresh)
2T organic peanut butter (almond or any nut/seed butter)
Stevia or favorite no carb sweetener
6 T chia seeds
1T unrefined coconut oil, melted
1t vanilla extract (4-6 drops Medicine Flower vanilla)
Optional - 4 drops Medicine Flower caramel extract
1/3 cup sliced strawberries
Directions
In blender, mix all ingredients except coconut oil and chia seeds.
Adjust sweetness as desired.
Melt coconut oil and blend into mixture.
Pour mixture into bowl and stir in chia. Let sit for 30 minutes and chill for 60 min. It will thicken. Add more chia if thicker consistency is desired.
Setve with sliced strawberries or other berries, or create a Buddha Bowl with additional shredded coconut, nuts and seeds.

YUM! Chia pudding has been my go-to breakfast for awhile now - this looks like a super delish variation of what we love to make.
