Try a low temperature oven..I like to use a dehydrator and I've not personally tried it, but I can't imagine it would be difficult.

Once sprouted, buckwheat can be dehydrated and/or ground into flour, depending on recipe. Its a great idea to have both on hand. Why not keep a jar of buckwheat flour and a jar of sprouted/dehydrated grains in freezer, so you are ready to go?
I'm ecstatic to see my grandson gobbling these down and asking for more. He loves, loves, loves them!!!! My daughter, Lindsey stores them in the freezer. I'm happy to note, Momma and baby are very happy with Cinnamon Grammy Crackers!!!!! They don't last long, even with double batches, so I'm not constantly sprouting more buckwheat as I get calls from my daughter saying, "Grammy, Leo wants more Grammy Crackers!" Who am I to say no to Leo?I

Ingredients
2 cups SPROUTED buckwheat- (1cup dried BW soaked 20 min and sprouted until tails JUST begin to form)
1 ripe banana
1-2Tbsp goji berries, optional
1 cup raw sunflower seeds
2 Tbsp chia seeds
2 Tbsp raw sesame seeds
1 Tbsp ground flax seeds
¼ cup raisins
3 medjool dates(or figs), pitted
1 tsp cinnamon
1 tsp vanilla extract (or 3 drops Medicine Flower vanilla extract - my fav)
¾ cup coconut water (or water)

Directions
After sprouting buckwheat according to directions, mix ingredients in food processor until batter blends to a spreadable consistency. (Because sesame seeds are so tiny, for little ones not yet chewing, its a good idea to do a quick grind first. I use a nut/spice grinder. (Note - I also make this in a HIGH SPEED blender, but it does require a lot more water and even my powerful blender overheated..so food processor is best or do smaller batches at a time).
Using Offset Spatula, spread mixture onto a non-stick dehydrator sheet (about ⅛ " thick). Garnish with coconut.
Dehydrate at 110 degrees F for 4 hours.
Flip onto a mesh dehydrator sheets, and gently peel off non- stick sheet. Using a dull-edged knife, cut Grammy Cracker squares to desired size. For younger ones, BE SURE to BREAK into smaller pieces they can pick up and not choke on. As they get older, they can hold onto little crackers and self feed.
On mesh dehydrator tray, continue to dehydrate up to18 hours or to desired consistency.
Options - once dehydrated, break into bite-sized pieces and serve with breast milk, almond milk, coconut milk, etc, and serve as "cereal." Add bananas or fresh fruit for a real treat.
This is also a great "diaper bag" snack for on-the-go parents. My daughter grabs them with an apple and banana for a quick, effortless snack while working. She arrived home one day saying how great she felt and was not starving as she walked in the door.
If totally dehydrated, store in airtight container for up to 2 weeks. Refrigerate or freeze to extend shelf life. Ours do not last long at all.

Suggestion - For a breakfast cereal similar to oatmeal, use freshly sprouted buckwheat, gently pulsed in food processor, and serve with almond milk, chopped nuts, dates, coconut, bananas, your fav sweetener, etc. Care more for a "Farena-type" cereal? Grind dehydrated buckwheat into flour and add warm almond milk. Stir and let sit. Add your favorite sweetener, nuts, seeds, etc., and enjoy.

Is the 2 cups buckwheat measured after sprouting or before?
Great question, Joey! The measurement is AFTER sprouting. It usually doubles in size...so start with about 1 cup...give or take...
