New York "Egg Cream" - Rawfully Tempting Style

Who remembers New  York style Egg Cream? My mom prepared these for us when we were younger using seltzer, chocolate syrup, vanilla extract, and milk.  I think the original recipe was made with egg, but ours never had egg in them. This was just a quick and  yummy beverage Mom whipped up! Well, I'm so excited because I created a HEALTHY ALTERNATIVE that is so very reminiscent of this childhood elixir!!!  When I took my first sip there was an instant recognition...and flashback.  I gave a sip to W and asked, "What does this remind you of?" Not being from NY, he sensed it was familiar, but did not grow up with it.  If you lived on the East Coast in the 60's...when the soda man actually delivered the seltzer bottles to your home, then you know what an Egg Cream is...


For this recipe, I used a 17 ounce bottle of Water Kefir (bottled from 1st ferment), added a very small chunk of cacao paste, (about 1/4"), 6-7 raisins, and fermented another 24 hours at room temperature.  

When ready add either 1/2 teaspoon of vanilla extract ( or
Lemonade Water Kefir
better yet...4 drops Medicine Flower Caramel Extract). An option would be to add 1/4 cup or so of almond milk but it tasted so delicious, I didn't bother.  Mix and enjoy this truly delicious beverage, knowing it's good for your gut. 

Now..if you don't have water kefir...you can surely try this with seltzer....BUT IT WONT HAVE THE PROBIOTIC BENEFITS THAT WATER KEFIR HAS....and it won't ferment, so you'll have to make or use chocolate syrup (mix cacao powder and maple syrup).  Water Kefir can be created in almost any flavor you can think of. I've used herbs, spices, nuts, seeds, fruits and extracts. But THIS little baby was AMAZING!!!!
