This delightful slaw is quick and easy to prepare. I apologize that it's been so long since my last post, but I've been enjoying my new grandson, Leo Bronze. His mommy is an artist and wanted a color for his middle name, so bronze it is. Being Grammy to a precious newborn requires some quick prep delights. I hope you enjoy this recipe.
Red Slaw Ingredients
¾ cup apple cider vinegar or coconut water vinegar
2 tablespoons honey
1/4 cup extra-virgin olive oil
½ tsp thyme, dried
Salt and freshly ground black pepper
1 head red cabbage, shredded
4 small carrots, grated
1 med red onion, chopped
1 cup raisins
1 medium apple, thinly sliced
1 orange, chopped
3 stalks celery, chopped
3 Tbsp parsley, fresh
Directions
In a small bowl, whisk together vinegar and honey. Whisk in oil, thyme, salt and pepper to taste. Set aside.
In a large bowl toss in cabbage, carrots, red onion, raisins, apple, orange, celery and parsley.
Add dressing and mix well. Let sit 1-2 hours and serve.
