This pudding has outrageous mouth-feel. It's creamy, rich, slightly sweet (or sweeter if you want it), and ever so satisfying! One of my all time favorite recipes! Please leave comments if you try this. We'd love to hear from you!
Classic Raw Vegan Chocolate-Vanilla Pudding Parfait
Vanilla Pudding Ingredients
*1 cup young Thai coconut meat
2 cups young coconut water, or filtered water
3/4 cup cashews (soaked 2 hours)
4 - 5 Tablespoons chia seeds (or more to thicken)
1 teaspoon vanilla extract (or 3 drops Medicine Flower Vanilla Extract)
1/4 cup maple syrup (grade B)
1/8 teaspoon sea salt
3/4 teaspoon lucuma powder (optional - adds a maple tone)
water, only as needed to thin or chia to thicken
Chocolate Pudding Ingredients
5 - 6 Tablespoons cacao powder
2 Tablespoons almond butter (optional)
1 Tablespoon maple syrup
3 Tablespoons cacao nibs, ground (optional)
1/2 teaspoon mesquite powder (optional)
Garnish
Crushed cacao nibs, shredded coconut, chopped nuts, vegan chips, etc. (I like to use this nut-seed grinder to grind my garnishes)

Blend coconut meat, water, and cashews. Add remaining Vanilla Pudding ingredients and blend until creamy.
Pour less than 1/2 Vanilla Pudding mixture into a small bowl and set aside.
Chocolate Pudding Directions
Add cacao powder to blender mixture and mix. Add nut butter. maple syrup, cacao nibs, mesquite, and blend until creamy.
Adjust sweetness and transfer mixture into small bowl.
To Serve
Layer Chocolate and Vanilla Pudding in a dessert/parfait bowl. Add garnish. Chill and serve.
