Raw Vegan - Pistachio Chia Pudding

I love chia pudding...and I love pistachios...so why not put them all together?

This recipe is quick and easy, rich and satisfying. I hope you enjoy this. As always, feel free to substitute and add other ingredients to suite your preference. This is just a starting point! Ingredients don't have to be exact...adjust thickness with chia, coconut meat, and/or cashews...



Pistachio Chia Pudding Ingredients
1 1/2 cups coconut water (or filtered water)
1 cup young Thai coconut meat (See Option below)
1/2 cup pistachios
1/4 cup cashews
3 Tablespoons chia seeds
2 Tablespoons maple syrup - grade B, or your fav sweetener
1 teaspoon vanilla extract (3 drops *Medicine Flower Vanilla Extract)
1/8 teaspoon sea salt

Directions
In high speed blender, mix coconut water, coconut meat pistachios and cashews.
Add remaining ingredients and blend until creamy.
Pour 2-4 serving bowls, garnish with chopped pistachios, and chill for an hour or more.

Option
If not using a young Thai Coconut - replace with the following:
filtered water,
1/4 cup dried coconut
1/4 cup cashews (1/2 cup including ingredients above)
Coconut water is very sweet, without it, you'll need to add additional liquid sweetener, to taste.
