Chocolate-Raspberry-Vanilla Pudding Parfait (Raw Vegan)

It is 85 degrees F and I'm not feeling very hungry for dinner, so I created this fabulous triple pudding parfait. By using either fruit (fresh or frozen), or dried fruit powder, you can prepare this in almost any flavor. I chose Chocolate, Raspberry and Vanilla.

This is not an exact science. If you don't have young Thai coconuts, you can use a combo of dried coconut, cashews and chia. Adjust water as needed too. Don't be afraid to experiment until you get the consistency you desire. My parfait is chillin' in the fridge and I can't wait to dig in...






Chocolate-Raspberry-Vanilla Pudding Parfait

Pudding Mix Ingredients
2 cups young Thai Coconut water (or water)
1 1/2  cups young Thai coconut meat (or 3/4 cup dried coconut)
1/2 cup cashews (or more if not using young Thai Coconut)
5 - 6 Tablespoons white chia seeds (white for light color)
1/4 cup maple syrup - grade B or your fav liquid sweetener
2 teaspoons vanilla extract (or 6 drops *Medicine Flower Vanilla Extract)
1/4 teaspoon sea salt

Raspberry Pudding Ingredients
2/3 Pudding Mixture (above)
5 teaspoons red raspberry powder (or 1/2 cup raspberries)
1 drop Medicine Flower Raspberry Extract (optional - pops the flavor)

Chocolate Pudding Ingredients
1/2 Raspberry Pudding Mixture
2 Tablespoons cacao powder (opt- carob powder)

Garnish  
grated cacao paste or ground nibs
Pink Coconut (mix ground dried coconut and raspberry powder)

Pudding Mix Directions
Blend coconut water, coconut meat, and cashews until creamy. Add remaining Pudding Mix ingredients and blend.

Divide 1/3 of this mixture into individual 3-4 serving bowls or glasses..

Raspberry Pudding Directions
Add red raspberry powder (or raspberries) to mixture, along with raspberry extract (if using), and blend well. (Taste and adjust as needed).

If using raspberries, add extra chia seeds or cashews, if needed to thicken.

Transfer a little less than 1/2 of this mixture into the individual serving bowls, topping vanilla pudding in each.

Chocolate Pudding Directions
Add cacao powder to remaining pudding in blender and mix well.

Transfer Chocolate Pudding to individual serving bowls, topping Raspberry Pudding, creating a triple-layer parfait.

Garnish
Grated cacao paste or ground nibs, crushed nuts, or pink coconut (made with raspberry powder).

Chill for several hours and serve.

  1. This looks delicious! I was just telling someone how I have to stop getting sugary drinks in the afternoon and crashing two sips in-- this would be the perfect cure for a sweet craving!
