Living (No)-Egg Nog

I am in love with this living no-egg nog for the holidays. I have prepared this for Potlucks and parties...and everyone loves it. Feel free to substitute ingredients you don't have handy. I'm sure it will come out equally decadent! Here's my version:


Living No-Egg Nog
1 cup almonds (soaked overnight)
1/2 cup cashews
4 cups water (may use half of this as coconut water)
6 Medjool Dates (pitted)
1 young Thai coconut, meat (see directions below)
(OPTIONAL- add more chia or cashews for creaminess)
1/4 cup chia seeds (white chia for best color)
2 teaspoons vanilla extract (6 drops *Medicine Flower Vanilla extract)
2 drops  Medicine Flower Rum Extract ( or 1/2 tsp liquid rum extract... or 3 Tablespoons real rum, if you don't mind the punch)
3/4 teaspoon cinnamon 
1/4 teaspoon ground nutmeg
1/16 teaspoon or to taste, ground cloves
5 - 6 Tablespoons maple syrup (dark or your favorite sweetener)
1/2 teaspoon turmeric (Or more for color)
1/8 teaspoon sea salt    
ice   

Directions
Blend almonds with water until creamy. Strain in nut milk bag or cheesecloth to remove pulp. (Save pulp for other recipes.) You’ve just made almond milk! 

Blend milk with remaining ingredients.

Option: make this a Green Eggnog by adding kale or greens.

Add several ice cubes and blend to chill.

Pour into a glass, sprinkle with cinnamon and grated nutmeg, and serve.

  1. You Granddaughter is a truly a princess.... I like the eggnog and also working on simpler and more orange-color recipe... will post it later this week... Fun things to explore raw cooking... isnt it ;-)

  2. thank you..this was my first crack...i was thinking a bit of tamarind to make it more yellow..but hope it does not alter the flavor..as for simpler...you could eliminate the dates and just use maple syrup....you dont have to use cinnamon or rum extracts...but that one or 2 drops of rum really gives it a great flavor....you def want to keep the nutmeg and cinnamon powder....

    def gonna try some tamarind for the yellow..let us know how you make out.
