A creamy, but very light salad dressing with a cooling citrus base. It also makes a wonderful veggie dip. This was the very first salad I made with the lettuce we are growing at the community garden. I'm so loving the garden. We lost our cucumbers - not sure why, but everything else is looking pretty fabulous so far!
Creamy Orange Sesame Salad Dressing
Ingredients:
2 oranges, juiced
1/2 - 1 clove garlic, crushed
1/4 cup sesame seeds
2 Tablespoons
hemp seed oil (or your fav oil)
2 Tablespoons cashews
2 medjool dates (or 2t maple syrup (or honey, not vegan)
2t apple cider vinegar (or your favorite)
1/8 teaspoon sea salt, to taste

Blend all ingredients until creamy. Drizzle over salad, and serve. Store in refrigerator.
