When you are craving a salad dressing that is a little more full-bodied, rich and creamy, this is an awesome option. This batch came out pretty thick, almost like a yogurt consistency. Feel free to thin with additional water, or use less cashews. Top your salad with fresh blackberries, grapes, sunflower seeds, etc.
The salad greens came from our very first harvest that we planted at our community garden. It feels so good to harvest and eat what we planted. I also added wilted kale. (Chop kale into bite sized pieces and massage with a bit of oil. I used hemp oil for this salad)
Creamy Blackberry Salad Dressing
Ingredients:
1/2 cup blackberries (fresh or frozen)
1/2 cup of cashews
1/2 cup filtered water
3 Tablespoons blackberry vinegar
2 Tablespoons coconut water vinegar (or your favorite)
1 Tablespoon hemp seeds
1 Tablespoon olive oil
1 Tablespoon black sesame oil (or here)
1/8 teaspoon sea salt, to taste
Directions:
Blend blackberries, cashews and water until creamy.
Add remaining ingredients and blend.
Drizzle over salad and serve.
