Dill Hummus

Yep - it's made with nuts...and Yep, it's rich, creamy and just a little bit decadent. This dish can be used in so many ways, adding a bit of creamy richness to any meal. Add a couple of spoonfuls to a wrap, stuffed full with lots of greens and sprouts...maybe a side of kimchi or raw sauerkraut. It can also be used as a salad dressing, a dip with raw chips/crackers, or spread it on a juicy sliced apple. I even made a pizza using Dill and Caraway Wrap that I dehydrated as a flexible pizza crust, topping with Nut 'n Dill Hummus, cucumbers, tomatoes, red onion, dulse flakes, etc. 

You will only need a small amount of this delicious treat to satisfy your hunger!



Nut 'n Dill Hummus
Ingredients:
3/4 cup cashews
1/2 cup sunflower seeds
2 Tablespoons pistachio nuts
1 Tablespoon Black Sesame Oil (or olive oil, coconut oil, etc)
6 Tablespoons water
2 Tablespoons fresh dill, chopped
1/8 teaspoon sea salt


Directions:
In a blender mix all ingredients. Add more water as necessary to achieve desired thickness.
Use spatula to scrape sides of blender and blend until creamy.
