Mint Chocolate Chip Smoothie
Ohhh...this is a KEEEEEEPER! Easy, delicious, refreshing and filling. In fact, I was so inspired by this combo, that I've got a batch of similar elixir in the freezer to prepare Mint Chocolate Chip Ice Cream. I'll be sure to take photos (if we don't eat it too fast ) for you to see. Mint contains Vitamin A, C, B12, folic acid, thiamine and riboflavin. It also contains minerals like calcium, copper, fluoride, iron, manganese, phosphorus, potassium, selenium and zinc. It's also been use to help with IBS and colitis. Drink up!
Mint Chocolate Chip Smoothie
Ingredients:
Almond Milk
1/2 cup almonds, soaked overnight
1 1/2 cups filtered water
Smoothie
3 Tablespoons mint leaves (packed)
1 1/2 frozen bananas
2 Tablespoons ground chia
2 Tablespoons hemp seed
2 medjool dates
2 drops *MF Mint Extract (optional)
1 Tablespoon of your favorite syrup)(optional)
2 Tablespoons cacao nibs
Directions:
1. Blend almonds and water. Strain in nutmilk bag or cheesecloth. Freeze pulp or dehydrate and use in recipes that call for almond pulp or flour.
2. Blend almond milk with all ingredients, except cacao nibs.
3. When mixture is creamy, add cacao nibs and pulse blend for a few seconds, leaving nibs in small chunks.
4. Add a few ice cubes and blend again.

Mint choc chip is my very favorite! I feel lucky that carob/mint go so well together those days that I'm actually respecting my ''not supposed to eat chocolate' thing.
