I came across this recipe, had all of the ingredients, except tortillas, and decided to make my first soup since I got the
VitaBaby! Instead of corn chips, we used corn kernels. Certainly not traditional dinner for Yom Kippur, but it worked for us. We added a yummy salad and threw in some of the leftover corn and cilantro, and dinner was divine!
Raw Tortilla Soup (by
Choosing Raw)
2 tomatoes, chopped
2 large red bell peppers, chopped
1/4 cup sundried tomatoes, packed
1/4 cup fresh cilantro, packed
2 large stalks celery, chopped
3/4 cup water
1 tbsp lime juice
2-3 tbsp olive oil
1 tsp salt
3/4 tsp cumin
1/2 tsp chili powder
1/4 tsp paprika
1 clove garlic (optional!! raw garlic is powerful, folks)
Dash cayenne pepper (optional)
Optional toppings: tomato, avocado, onion, corn chips.
Blend all ingredients except olive oil. When the ingredients are well blended, drizzle olive oil while the motor is running until the soup is creamy and emulsified. Pour into bowls and top with the chopped veggies and corn chips! Serve alongside more chips, some pita strips, an Ezekiel sprouted wrap that you’ve warmed in the oven, or simply some chopped veggies for a delicious meal!

ReplyDeleteI can't wait to try it. We all know that if we lack creative ideas to prepare our own raw soups, we may end up eating a high fat soup that we pick up or order in from a take-out spot.
Thankfully we can actually enjoy this freshly-prepared organic raw soup without guilt. Thanks for sharing this delicious recipe. I will add this to my favorites.
