Strawberry Custard Cream Pie

I made this awhile ago, and never posted it. Someone asked for it, so here ya go. This is a nice light summer treat, and the only nuts are in the crust, so you could make the "custard" without it, if you wanted to avoid nuts altogether.  I didn't measure everything, so the recipe below is approximate. Good thing about raw food, is you can taste it as you go along. So...taste it and adjust measurements as you see fit!


"Strawberry Custard Cream Pie
Crust 
1 1/2 cups walnuts (soaked 4 hours)
1/4 cup macadamia nuts 
3/4 cup dates, pitted - Medjool
1 Tbsp cacao powder 
2 drops *Medicine Flower Chocolate Extract (optional)

Filling
4 cups strawberries, stemmed and cut in half
3 cups of young Thai coconut water (filtered water -add as needed)
1 cup young coconut meat (you can try 1/2 cup dessicated coconut)
4 drops *Medicine Flower Strawberry Extract (optional - flavors are concentrated so they really pack a punch)
3 drops *Medicine Flower Vanilla Extract (or 1/2 tsp other liquid extract - this is my favorite vanilla extract!)
1/2 cup *Irish moss paste (Optional or add 2 Tbsp ground chia)
1/2 cup ground white chia seeds
1/4 cup agave (or your favorite sweetener, to taste)
1/4 cup cacao butter, shaved and melted
1 Tbsp coconut oil, melted
1 tsp sunflower lecithin (optional)
2 Tbsp pysllium husk powder
pinch of sea salt

Preparation
Blend strawberries and water and pour mixture through a sieve. Transfer strained strawberry liquid back to blender.  Add Irish moss paste, chia, extracts, agave, and salt and blend until creamy.

Shave cacao butter and melt with coconut oil in dehydrator or place over a bowl of hot water.

Add melted ingredients, blend well. Add psyllium and lecithin to custard mixture and blend well. It should start to get pretty thick, but stay creamy. You will have to adjust this here to your liking. If too thick, add more water, if not thick enough, add more psyllium in small amounts and test. Mixture will thicken some in refrigerator too.

Press crust into bottom of an 8" fluted tart pan with removable bottom, pressing up sides about 1/2 inch or so. Pour custard mixture into pan. Top with sliced strawberries. I made a cashew cream mixture, added Medicine Flower White Chocolate Extract, and drizzled over top of pie.

How to Make Irish Moss Paste
Grab a handful of moss and rinse well. Soak in a jar of water in refrigerator 6 - 12 hours, rinse and replace water at least twice.

Rinse. Chop 1 cup of moss in small pieces. (Put remaining moss back into fresh water and refrigerate)

Blend about 1 cup soaked and chopped Irish moss with 2 cups water. Blend well, and frequently scrape sides of blender. Make sure there are no small pieces or grit... be patient as this can take awhile.  Refrigerate remaining paste for up to 3 weeks. (Works great on skin as a mask too!)
