Okay, we have green smoothies, so why not Green Marinara Sauce? This lovely sauce is simple to prepare, and quite nutritious. Add as many greens as you like the taste of. I used Kale, parsley and basil, but feel free to experiment with dandelion, spinach, chard, etc.
Green Marinara Sauce:
2 cups tomatoes, chopped
1/2 cup sun-dried tomatoes, soaked and chopped
1/2 avocado(optional)
2 Tbsp fresh parsley, coarsely chopped
2 Tbsp fresh basil, chopped
2 kale leaves, chopped
1/4 tsp oregano
1 clove garlic, crushed
1 Tbsp olive oil
1 medjool date, soaked and chopped
2 Tbsp red onion, chopped
1/4 yellow bell pepper, chopped
pinch of sea salt
pinch of cayenne pepper
Mix in blender or food processor until creamy. Store in refrigerator for 2-3 days.
If you'd like to make this a Cream Sauce - try adding sunflower seeds, or cashews to the mix. Add water as needed to desired consistency.
