Spicy Red Tahini Sauce on Zucchini Noodles
2 to 3 tomatoes
1/4 avocado
3 Tbsp tahini
1/2 red bell pepper
1/4 t chili powder
1/4 tsp oregano
1 Tbsp fresh basil (1 tsp dried)
1 T hemp seeds
1 glove garlic, crushed
1 Tbsp lemon juice
1/8 tsp ground chipotle pepper (optional for a nice smokey tone)
dash of cayenne
1/8 tsp salt
Noodles:
2 zucchini, for noodles (or combo of zucchini and yellow summer squash)
Blend Sauce ingredients until creamy and season to taste. Mix Sauce into zucchini noodles and let sit for 30 minutes. Garnish with black sesame seeds. Warm in dehydrator is you like. Serve and enjoy!! (add other veggies to this sauce for more variety).
** Don't have a spiralizer? Do not despair! Take a veggie peeler and slice yourself some thin, linguini like noodles. I HIGHLY suggest investing in a SPIRALIZER if you don't have one, but it's not imperative.

Gosh, this is an amazing recipe. I was drooling only from the image itself, but the ingredients sound just as yummy. I don't have a spiralizer just yet, so i'm going tot try peeling off thin slices of zucchini, hopefully it will still look a least half as tempting as your version. And i can just imagine it a bit warmed up, and all the flavors blending in nicely.
I'm curious, though, do you use a spiralizer for anything else than making noodles? I don't know how often i would eat noodles, so investing in an appliance that is so specialized, without consuming noodles regularly just seems like a lot to ask.
Hi RA! YES, I love the spiralizer and use it often enough that it was worth the investment for me. In fact, I have two different kinds. I have several recipes posted where I spiralize. AGain, you can cut them by hand, but we just LOVE this texture. Also, the machine comes with 3 blades and one blade is a straight one that does ribbon cuts and spiralizes red onion beautifully!!! I have a ton of fun with that blade for apples, cucumbers, etc.
