Do you have a link somewhere about soaking seeds and nuts and the reasons behind it? I keep hearing vague referrals to it, but I'm not sure exactly WHY its better for you.
That is a great question. I know I've talked about soaking nuts in recipes, but not sure I ever posted on how or why, so thanks for the suggestion. I'll have to work on that. I'm no expert...but I know that brown skinned nuts contain an anti-enzyme. I believe this is what stops insects from eating away at the nuts and grains and seeds. they are in a dormant state when we buy them..soaking removes the anti-enzyme by waking up the nut/seed...telling it -it's time to grow into a plant...At this stage the seed germinates and the anti enzyme is destroyed. The seed awakens and the nutrient/enzyme value of the seed multiples. I've heard it can increase up to 600 percent when sprouted, (but don't quote me on that). When you soak almonds and other dark nuts, yhou are "germinating" them. You really don't sprout them. Grains, however, can sprout. When I make my flour, I only sprout them until the tail just starts to burst. After that, the taste will change drastically.
Now the seed is much more easily digested by humans and is even more nutritionally beneficial. Most browned skinned nuts are soaked overnight (6-8 hours). I only soak fair nuts like cashews and macadamia nuts for 30 minutes to 2 hours. I have read mixed opinions on that.
For grains, I check Sprout People. Some grains, like quinoa have a very short sprout time and only need to be soaked for 15 minutes or so, while Kamut needs to be soaked overnight and then sprouted. I hope that helps!! In addition to making the seed more nutritious - soaking also softens the consistency. For flours, I soak, sprout, dehydrate, grind. I hope this summary helps some.
