"Refried Beans" for Nachos
This is so tasty and easy to prepare. I don't remember if I created this or found it...sorry! Feel free to also enjoy this recipe served in a lettuce roll-up with sprouts, and other goodies, or slather all over yummy nachos.
Refried Beans for Tacos
1 cup almonds
1/2 cup sun-dried tomatoes, soaked for 1 hour
1 Tbsp olive oil
1/2 jalapeno, minced (depending on taste)
1/4 red onion, chopped
1 tsp cumin
1 tsp coriander
pinch Sea salt, to taste
water, as needed to process
Procedure
1. Combine nuts and olive oil in food processor or high speed blender.
2. Add water as needed
3. Add remaining ingredients and process until smooth, or leave a little chunky.
4. Add more jalapeno pepper or chili powder to make spicier
