"Rawcotta" Cheese - Fermented

If you have some extra time, this cheese is definitely worth trying. This Basic "Ricotta" or Creamed Cheese can be modified in so many ways, to create cheese that is sweet or savory, to tart or zippy.Use your favorite herbs and spices to create your own sensational blend. I found this great recipe for a seasoned cheese below, with a great photo tutorial here, and modified it to fit my own personal taste.

Green Papaya Smoothie

Christopher Columbus referred to papayas as "the fruit of the angels."  Papayas contain papain, an enzyme that helps digest proteins. In addition to providing a luscious taste that we associate with the tropics, they are rich in antioxidant nutrients, vitamins and minerals such as carotenes, vitamin C, flavonoids, B vitamins, folate, pantothenic acid, potassium, magnesium, and fiber.The enzymes and nutrients in papaya are noted to be helpful in treating many disorders, such as heart disease, high cholesterol, cancer, inflammation, IBS etc.

Zippy Red Lentil Burgers

These are obviously not raw, but if you are transitioning to a plant based diet, and crave a bit of cooked food on a cold, Winter evening, these are super yummy and easy to prepare. Tips for Staying on Track During the Holidays



Holidays and spending time with family can be challenging when we're transitioning. Planning ahead is your best strategy. Be sure to contribute something raw to the meal that others will enjoy, but that you'll also have to fall back on. It helps me to bring dessert, so I'm  less tempted to eat some sugary snack I'll really regret later.(By the way, the photo is of raw cookies wrapped for a holiday gift!)

Baked Macaroni and Cheese

Creamy Chocolate Mousse Cake

Fabulous!Creamy! Rich, chocolaty, and not too sweet. I added an optional middle layer, using some Almond Butter Chia Pudding and added a tiny bit of psyllium husk powder to thicken it up. The middle layer blended into the rest of the cake.....but you can see a thin light colored line thru the middle. That's the pudding!

Raw Corn Chips/Taco Shells

These are great corn chips and on the mild side. Add  some fresh hot pepper or increase the hot chili powder to spice 'em up. I like them this way for nachos, as not to overpower the flavors of the other dishes.

These can be baked in a low temperature oven with the door open, but I've never tried it, and it's not very economical. I do love having a dehydrator for treats like this.

"Cheese" Sauce - Great For Nachos

While we are on a nacho stream, here is a great recipe for cheese sauce. You can also use this as a delicious veggie dip, cheesy topping for a veggie burger, or over spiralized zucchini noodles for some yummy "Mac and Cheese."If you don't want it spicy, cut down or eliminate the chili and cayenne powders.

For more variety, pour Cheese Sauce over a salad and sprinkle with Taco Meat.  I'm getting hungry just writing about this!

"Refried Beans" for Nachos

This is so tasty and easy to prepare. I don't remember if I created this or found it...sorry! Feel free to also enjoy this recipe served in a lettuce roll-up with sprouts, and other goodies, or slather all over yummy nachos.

Perfectly Purple Nachos

YUummmm! Pretty purple corn chips served with "refried beans", creamy cheese sauce, guacamole, salsa, sunflower seeds, olives, lettuce, scallions...

Purple Corn Chips

I bought purple corn just to make these. Well, look how pretty they are!. I mixed some yellow corn into the batter or they would have been even brighter. W, my professional taster said these are the B E S T corn chips I've made so far. Woohoo!

Chinese Veggie Stir-Fry Surprise

And the surprise is..It's NOT stir-fried at all - It's RAW! One of W's favorite SAD meals is Chinese Stir-Fry, Spicy Garlic "Anything." I've been wondering if I could create a raw dish that resembled our Chinese stir-fry. Unbelievable! The veggies turn out brightly colored and crisp, yet tender. Perfect!

We made enough for 4 people and there was barely any left over! We both kept going back for more...and more..and more... Thumbs up on this one!
