La la la - "So Happy Together." Raspberry and chocolate, what a wonderful combo! This is a quick and easy recipe to satisfy any sweet tooth!
Raspberry Fudge Swirl Parfait
2 cups raspberries (fresh or frozen)
2 cups water
2 cups cashews (soaked 2 hours)
2 - 3 Tbsp cacao powder
4 Tbsp ground white chia seeds
3 Tbsp maple syrup, or YFS(your fav sweetener to taste)
pinch sea salt
1 tsp vanilla extract (or 2 drops Medicine Flower Vanilla)
2 tsp psyllium husk powder (to thicken, if needed)
Blend raspberries, cashews and water until creamy. Add remaining ingredients, except for psyllium husk powder. If mixture still feels too light and not starting to thicken, add psyllium husk powder and blend well.
Chocolate Sauce
Mix cacao powder and agave, adding water as needed to thin. Taste for sweetness.
Option: Instead of Chocolate Sauce, use Love Street Chocolate Spread.
Option: Use coconut water in place of filtered water. You can add the coconut meat too.
Serving: Using a spoon, swirl and smear a THIN coating of Chocolate Sauce around the inside of the goblet. Pour mixture into goblets. Refrigerate for at least 1 hour (best overnight) to set. Garnish with fresh raspberries.

Rawfully tempting fo' sho! I love to use psyllium husk as a thickener. I have learned to go easy on it though ;)
It's also not tasteless..so if you use too much, you can ruin the flavor..def gotta be careful with it...but a lil goes a long way!
Raspberry is my choice
