Vanilla - Blueberry Chia Parfait
Another quick and easy, yet impressive looking breakfast, snack or dessert. Enjoy the many benefits of chia seeds by including them in ice cream, bread, pudding, salad, crackers, etc. I served this lovely parfait to dinner guests that were not familiar with RAW, and they loved it.
If you are not a fan of coconut, neither of us think this tastes like coconut at all. Young coconut meat adds texture and give it a nice creamy body and base, but you taste the vanilla and blueberries...that's it!!! For special holidays and to add color, add a layer of fresh strawberries or mango, etc.

Vanilla - Blueberry Chia Parfait
Serves : 6
Ingredients:
1 1/2 cups Young Thai coconut meat (fresh or frozen)
1 1/2 cups coconut water (or filtered water)
1 1/4 cups cashews, soaked 2-4 hours
1 tsp liquid extract)
3 Tbsp maple syrup, per taste
pinch of sea salt
1 drop Medicine Flower Blueberry Extract (optional but insanely good)
1 1/2 cup blueberries
5-6 Tbsp chia seeds (add as needed)
Directions:
Blend coconut, coconut water and cashews until very creamy.
Add vanilla, salt, sweetener, and blend.
Pour half of mixture into a bowl.
Add blueberries to mixture in blender and mix until creamy.
Pour into a separate bowl.
Add 2 - 3 Tbsp of chia seeds to vanilla mixture, stir and let set.
Add 1/4 cup of chia seeds to blueberry mixture, stir and let set.
Let sit about 15 minutes, stirring once or twice.
Spoon layers into a parfait glass. Refrigerate for 30 minutes or more and serve.

very nice!!! Wonder if it would would still be good with no cashews???? My son is allergic!!
ReplyDeleteCashews really give it the body, but I did post a Nutless strawberry "custard" awhile back...check that out and you could play around with the flavors. It was not as rich a body...but it was very tasty as I recall. you may have to look into using Irish Moss to help you with the body of the pudding...and definitely use coconut meat/water as well. Let us know how you make out!!
ReplyDeleteThis looks so delicious, but what if one cannot get a hold of fresh young coconut meat? Is there a substitute to use to still be able to make this recipe? We can get all the other ingredients, as well as Irish Moss. Any suggestions? Thank you!
ReplyDeleteHi Organic Gardens - you can certainly make pudding without coconut meat. If you browse though some of my other pudding recipes, you may get some ideas. Without actually doing this, I would not have the exact ingredients, but you can add a bit more cashews, use filtered water and add a couple of tablespoons of ground chia..that will thicken it too. The taste will not be quite the same..but still very enjoyable!
