Note: the pudding is actually thicker than is looks. I took the picture before it totally set.
"Tapioca" Pudding
1 cup cashews (soaked 2 hours)
1/2 cup young coconut meat (or 1/2 cup macadamia nuts)
2 1/2 cups water (preferably use coconut water and water combo)
1/4 cup honey (or sweetener of choice)
1/4 cup Irish moss paste (optional)
5 drops Medicine Flower Vanilla Extract (or 1 1/2 tsp vanilla extract)
1 tsp lucuma powder
pinch sea salt
pinch cardamom (very small pinch)
pinch cinnamon
1/4 cup chia seeds (add more as needed to thicken, especially if not using Irish Moss Paste)

Add remaining ingredients except chia seeds and cinnamon, and blend until creamy.
Transfer to a mixing bowl. Add chia seeds, mix and refrigerate for several hours.
To Serve: transfer to individual serving bowls, sprinkle with cinnamon and serve. (Top with your favorite whipped cream recipe).

I have used both quinoa and chia seeds to make "tapioca" style pudding. The girls and I LOVED it, but my hubby and older son... not so much. I thought it was DIVINE. Great post!
Hmm i never tried quinioa as a thickener. Does it change the flavor? I don't taste chia at all..here is a suggestion....try grinding the chis first..you wont get the little tapioca like beads..but you will get a nice creamy pudding!
I think you get more nutritional benefits out of the chia by grinding it too. that little bubble of gel and the actual shell of the chia seed make it quite hard for your body to break down the seeds and get the omega benefits inside.
