"Peanut Butter" Fudge Ripple Ice Cream

This does taste as creamy and yummy as it looks! FYI - this bowl is only about 2.5 inches in diameter. These are delicious mini scoops, not full sized scoops. The flavor and texture are so rich you only need a small amount to feel satisfied. INDULGE without guilt!


"Peanut Butter" Fudge Ripple Ice Cream

Ice Cream
1 cup cashews (soaked 2-4 hours)
1/4  cup macadamia nuts
1 cup water (as needed)
1/3  cup raisins
2  Tbsp nut butter (almond or peanut butter)
3 Tbsp grade B maple syrup
1/2  tsp lucuma powder (and Living Tree Community) - optional, adds maple-like flavor
1/2  tsp mesquite powder  (Living Tree Community) - optional
3 drops Vanilla Medicine Flower Extract  (or pinch vanilla bean powder)
2 Tbsp grated cacao butter, melted (Living Tree Community)


Fudge Ripple
2 Tbsp cacao powder ( Living Tree Community)
3 Tbsp cacao butter, melted
2 tsp melted coconut oil
2 Tbsp grade B maple syrup
2 drops Dark Chocolate Medicine Flower Extract(or 1 tsp chocolate exract)
water as needed to thin 
pinch of sea salt

Ice Creme Preparation
In blender, combine cashews, macadamia nuts and water. Mix until creamy.
Add water as necessary, but do not make too thin.

Add raisins and nut butter. Blend well.

Add remaining ingredients and mix until very creamy

Chocolate Fudge Ripple Preparation
Melt cacao butter and coconut oil. Add remaining ingredients to melted mixture and stir or whisk. Add water only as needed to reach desired consistency. Keep in a bowl, set in bowl of hot water to keep melted.

Pour ice cream into bowl and freeze 2 hours.

Ice Cream Maker 
Pour cooled mixture into electric ice cream maker and follow directions for your model until done.

No ice cream maker? 
You have a couple of options. 1- Continue to aerate, or stir freezer mixture briskly every hour or so until it's close to  a consistency you like it.

Or...
2 - Freeze in ice cube trays until firm and toss in food processor or blender until creamy. Serve immediately.

Add Fudge Ripple
When ice cream is freezing, but still "stirable," drizzle Fudge Ripple into ice cream and quickly swirl the fudge into the ice cream with a fork. Do not over stir.

Scoop and serve...or make an ice cream sandwich with your favorite raw cookies.

I used Chocolate Nut Bread and Crazy Nutsy Banana Bread as sandwiches. Both were delicious!
