Raw Dawg Rory, did a great video on how to make a quick and easy cake. This is my version. I didn't always measure ingredients, as I was trying to just toss things in that "felt" right, so I can only give you an approximate idea of what I used. BE CREATIVE!
The surprise? It's amazing how much the sliced banana filling tastes like a banana cream filling!
German Chocolate Surprise Cake
Layers
1 1/2 cups shredded coconut
1/2 cup walnuts
3-4 dates, (or more if you want sweeter)
2 Tbsp goji berries (optional)
1 Tbsp cacao powder
1 drop Medicine Flower Coconut Extract (or pinch of vanilla bean powder)
1 drop Medicine Flower Dark Chocolate Extract (optional)
The Medicine Flower Extract adds an amazing COCONUTTY and CHOCOLATEY kick
Mix layer ingredients in food processor until sticky. Set aside.
Filling
1 - 2 bananas, sliced
Icing
1/2 cup almond butter
1 Tbsp cacao powder
1 - 2 drops Medicine Flower Coconut Extract (or pinch, vanilla bean powder)
1 drop Medicine Flower Dark Chocolate Extract (optional)
2 - 3 Tbsp of agave or raw honey (to taste)
water, to thin to desired consistency
pinch, sea salt
Mix icing ingredients in high speed blender or food processor until creamy. Add enough water to mix, but not too much.
Assembly
Sprinkle shredded coconut in bottom of 5" round spring form pan.
Press 1/2 layer mixture into bottom of pan.
Tip: Wet hands with water to help press sticky mixture into pan.
Place sliced banana over first cake layer.
Add remaining layer mixture over banana, and firmly press into place.
Flip pan, and release cake onto serving plate. (coconut coating will now be on top)
Spread icing on cake. (use an offset spatula to make it easier)
You can top with sliced bananas, chopped nuts, chocolate sauce, or your favorite topping. This can be served immediately.
