If you have some yummy chips hanging around, begging to be eaten, here's a quick and easy salsa with a little kick! Make it as spicy or mild as you like. Enjoy a quick, nutritious, and healthy snack. This is very tasty on carrot and celery sticks for a super simple treat.
Kickin' Mango Salsa
2 medium tomatoes
3-4 green onions
1/2 red bell pepper
1/2 orange or red bell pepper
2 - 3 champagne mangoes
1 jalapeno pepper, depending on taste
2 Tbsp lime juice
1 Tbsp cumin
1 Tbsp cilantro, dried (2-3 Tbsp fresh)
1 clove of garlic, crushed
1 tsp cayenne, to taste
sea salt, to taste
1/2 orange or red bell pepper
2 - 3 champagne mangoes
1 jalapeno pepper, depending on taste
2 Tbsp lime juice
1 Tbsp cumin
1 Tbsp cilantro, dried (2-3 Tbsp fresh)
1 clove of garlic, crushed
1 tsp cayenne, to taste
sea salt, to taste
Mix all ingredients except bell peppers in food processor. Add peppers and pulse, leaving them a little chunky. Season to taste. Refrigerate and serve.
Great with chips and guacamole.
