Crazy Coconut Ice Cream
2 cups young Thai coconut flesh, or shredded coconut
2 cups coconut water, or filtered water
2 dates, pitted and chopped
3/4 cup cashews
2 Tbsp coconut oil
2 Tbsp maple syrup, honey or yacon syrup (to taste)
1/2 tsp lucuma powder (optional)
pinch Bourbon Vanilla Bean powder (or vanilla extract)
2 drops Medicine Flower Coconut Extract (optional, makes a huge difference)
pinch sea salt
cacao chips for garnish
shredded coconut for garnish
In a high speed blender, blend coconut and coconut water.
Add dates and cashews and blend until smooth.
Add coconut oil, agave, lacuma, vanilla powder and salt. Mix until creamy.
Run through an ice cream maker as directed, or pour into a glass bowl and freeze and mix
well every 2-3 hours until firm.
Serve with shredded coconut, cacao chips, maple syrup, etc.

Thanks so much Pam!! Try and make it...the hardest part is opening the darn coconuts..after that,it's a breeze!! Again, another one, worth the effort. I wish I had a juicer with the homogenizing plate, but I don't yet...That would enable me to take it out of the freezer and make it really super creamy. But....it's still awesome.
The fresh coconut meat and coconut water were awesome. I try to NOT use agave very often. Technically it's not raw...and it's still a sugar. Right now, my "lifestyle plan" excludes fruit and anything sweet." This was a TREAT and once in awhile, it's okay. I prefer to use dates when making raw desserts, but sometimes, I get lazy and agave does come in handy.
I did a taste test with different brands of agave, and there was a huge difference between them in flavor. Some tasted like sugar water, some had a maple flavor, while others were deeper, more like molasses.
When you say coconut water, are you referring to the liquid in the center of the coconut?

Anonymous - Coconut milk is a combination of shredded coconut meat and water. You can find canned coconut milk in most markets or make your own.
